Bok Choy

I’ve had bok choy before in Chinese restaurants but never before have I attempted to tackle it at home. I decided to see play it safe by just sautéing it as a side dish the other day and can’t wait to make it again…I see nutritious stir-fries and healthy egg rolls in the near future! According to, “bok choy is very low in calories, has no fat and supplies many vitamins and minerals, but it’s especially high in vitamins C, A and K.” One cup of this marvelous veggie contains 63% of your daily value of vitamin A, 52% of vitamin C and 40% of vitamin K, while also providing you with a good amount of folate, vitamin B6 and smaller amounts of other B vitamins! PLUS, studies have shown that bok choy and other cabbages can help prevent cancer. Fabulous, right?

2 bundles or 1 lb of baby bok choy, cleaned and ends trimmed
1 garlic clove
1 tablespoon sesame oil
1 tablespoon water
Soy sauce, to taste

To start, trim off the bottom’s bulb. Thoroughly rinse stalks and leaves. In a large frying pan, warm sesame oil and garlic until golden. Add in bok choy, cook for one minute.

Add in water and soy sauce, cover for one minute. Uncover and stir occasionally, letting the leaves wilt and get crispy for about two minutes or until the water is fully evaporated.
